I just got my knives back from sharpening; anything I should know?

Remember they are sharp. Sounds simple, but that is basically it.

Before your knives were sharpened, you may have slowly become accustomed to using a dull knife, that was getting progressively duller. That means you were probably using more force to cut with and may have become accustomed to working around a duller edge. Now that your knives are sharp, you need to adjust the force you use and generally be more careful around the edge to avoid cutting yourself.

Just go slow at first until you get a feel for the change.

Remind yourself, they are now sharp. It is also a good idea to warn any family members, roommates or anyone else that frequently shares the kitchen with you.
